Trifongo

In early February we invited some Swiss friends for dinner and we made trifongo.
Trifongo is a mixture of fried green plantains, fried sweet plantains and boiled yucca root (plátanos verdes, plátanos maduros y yuca).
The  mixture is combined with salt, pepper, garlic, roasted sesame seeds and vegetarian organic broth. It is molded into balls and then fried.  For our guests it was certainly an exotic and different treat. For all it was a delicious side dish. I’m hungry! Enjoy the photo.
